Lionesas de crema



Desde que hago la colección de "Delícias al horno" le estoy dando a la repostería cosa fina, la verdad es que estoy cogiéndole el tranquillo y los resultados son estupendos. Hoy por votación popular en casa, le ha tocado el turno a las lionesas. Os paso la receta y luego os comento cómo han salido...
Ingredientes:
Para la masa:
* 150gr de harina
* 4 huevos
* 300ml de agua
* 125gr de mantequilla
* 1 pizca de sal
Para la crema:
* 1/2 litro de leche
* 4 yemas de huevo
* 120gr de azúcar
* 50gr de maicena
* 1 vaina de vainilla
* Piel de medio limón
Preparación:
Para la masa:
- Ponemos una cazuela al fuego con el agua y la mantequilla, cuando rompa a hervir añadimos la harina tamizada y la sal. Bajamos un poco el fuego y removemos hasta conseguir una masa que no se pegue. Apartamos del fuego y dejamos enfriar 10 minutos.
- Incorporamos los huevos batidos, uno a uno, mezclamos de manera que la masa quede suave, pero consistente. Envolvemos la masa en papel film y la dejamos reposar 30 minutos.
- Precalentamos el horno a 200ºC, ponemos un recipiente con agua dentro del horno para generar vapor. Esto nos ayudará a que las lionesas suban.
- Con ayuda de una cucharilla de postre, cogemos porciones de la masa y las vamos depositando sobre una bandeja de horno engrasada con mantequilla. Dejamos unos centímetros de separación entre ellas, ya que se hincharán posteriormente.
- Horneamos durante 20 minutos.
- Nada más sacarlas del horno, haremos unos cortes laterales en cada lionesa para que escape el vapor. Reservamos.
Para la crema:
- En un recipiente batimos las yemas de huevo con el azúcar. Reservamos.
- En un cazo, ponemos la leche al fuego. (Reservamos medio vaso de leche para disolver más tarde la maicena). Añadimos la vainilla y la piel de limón. Cuando esté a punto de hervir, retiramos del fuego y dejamos infusionar unos 10 minutos y la colamos.
- Volvemos a poner la leche al fuego, disolvemos en la leche que hemos reservado la maicena y removemos bien para que no se formen grumos. Cuando vaya a hervir, retiramos del fuego y añadimos la mezcla de yemas y azúcar.
- Seguimos mezclando a fuego lento hasta que espese, con cuidado de que no se nos queme por el fondo. Dejamos enfríar.
- Rellenamos las lionesas con la crema y espolvoreamos con azúcar glas por encima para decorar.
 
Con estos ingredientes han salido 20 lionesas. No hay palabras para describir cómo han quedado, poco más y se me saltan las lágrimas de lo bonitas y deliciosas que han salido. Que las disfrutéis!!.
 
 
Cream choux

Since I’m doing the collection of “oven delights”, I’m working a lot with pastries and it seems like finally I got the hang of it and the results are great. Today, as a petition at home, it’s the turn for cream choux.

Ingredients:

For the dough:

* 150gr of flour
* 4 eggs
* 300ml of water
* 125gr of butter
* 1 pinch of salt

For the cream:

* ½ l of milk
* 4 egg yolks
* 120gr of sugar
* 50gr of corn flour
* 1 vanilla bean
* Peel of a half lemon

Preparation:

Dough:

- In a pot put water and butter in a low heat. When it starts to boil, add flour and salt. Stir well until the dough isn’t sticky. Remove from the heat and leave it to cool for 10 minutes.
- Add beaten eggs, one by one, mix the dough firmly. Cover with wrap film and let it stand for 30 minutes.
- Preheat the oven at 200ºC. Put a bowl with water in the oven to create steam.
- Using a teaspoon, pick portions of the dough and place them in a buttered tray up for the oven. (Don’t put them very close)
- Bake for 20 minutes.
- Once you take them off from the oven, make some side cuts on the choux in order to release steam.

Cream:

- In a bowl, mix egg yolks with sugar. Reserve for later.
- In a pot put some milk to warm. Add vanilla and the lemon peel.
- When it’s going to boil, remove from the heat and let it stand for 10 minutes and drain the mixture.
- Put again some milk to warm, add corn flour. Stir well so as not to form lumps.
- When it’s going to boil, remove from the heat and add the mixture of egg and sugar.
- Stir well in low heat until thick being careful that it isn’t burnt. Leave it to cool.
- Fill the choux with cream, sprinkle icing sugar on them for garnish.

With these amounts, I cooked 20 cream choux. I can’t describe exactly how the result was, I almost cried for seeing how pretty and tasty they were. I hope you like it!!
