Croissants de Julia Child




Ingredientes para unas 24 piezas:

* 25 gr. de levadura fresca
* 90gr.de agua tibia 
* 30 gr. de azúcar
* 450 gr. de harina de fuerza
* 10 gr.  de sal
* 250 gr. de leche
* 50 gr. de aceite de girasol
* 225 gr. de mantequilla, que debe estar bien fría
* 2 huevos batidos para pincelar al final

Preparación:
- Mezclar la levadura, el agua tibia y 10 gr. de azúcar en un bol pequeño. Dejar reposar.
- Mientras tanto, calentar la leche ligeramente y añadir la sal y los 20 gr. de azúcar restantes.  Reservar. 
- Poner la harina en un bol para amasar a mano o  con batidora. Añadir el aceite, la mezcla de la levadura y la mezcla de la leche.  Amalgamar todos los ingredientes hasta que toda la harina esté incorporada. 
- Colocar la masa obtenida sobre una superfície enharinada, y dejar reposar un minuto.  Golpear la masa sobre la mesa unas diez veces. Después volver a poner la masa en el bol y tapar con film.  Dejar reposar a temperatura ambiente unas tres horas.
- Después de que la masa haya triplicado su volumen la colocamos en la mesa enharinada.  Formamos un rectángulo con la masa y doblamos en tres como si fuera una carta.  Colocar en una bandeja y tapar con papel film o un paño y dejar reposar una hora y media.
- Aplanar la mantequilla con un rodillo, debe estar muy fría.  Poner la masa en la mesa enharinada y estirar formando un rectángulo.  Colocar la mantequilla en el centro de la masa y tapar con los extremos de la misma.  Comenzar dando golpecitos suaves con el rodillo para ir integrando la mantequilla  en la masa.  Una vez integrada comenzar a estirar y vamos plegando los extremos de la masa y dando 1/4 de vuelta a la masa cada vez  y dejamos reposar en la nevera por lo menos 10 minutos entre vuelta y vuelta. En total serán unas 6 vueltas.
- Una vez tenemos la masa ya totalmente terminada, la estiraramos hasta un grosor de 4-5 mm. Cortamos triángulos de unos 10 cm. de lado y los enrollamos para formar los croissants.
- Poner en bandejas de horno, pincelar con huevo batido y fermentar, en un lugar cálido y sin corrientes de aire, hasta que doblen su volumen. Volver a pincelar con huevo batido y hornear a 190º C hasta que estén dorados y subidos.
- Una vez horneados, dejar enfriar sobre una rejilla. Se pueden salpicar con azúcar glas, cubrir con almíbar o dejar tal cual, eso depende de los gustos. Se pueden hacer del tamaño que se desee, se pueden rellenar y pueden congelarse una vez fríos.


CROISSANTS JULIA CHILD

Ingredients:
* 25gr yeast
* 90gr warm water
* 30gr sugar
* 450gr bread flour
* 10gr salt
* 250gr milk
* 50gr canola oil
* 225gr butter
* 2 eggs

Preparation:
- Mix the yeast, warm water, and 10gr of sugar in a small bowl. Set aside for the yeast and sugar to dissolve and the yeast to foam up a little.
- Heat the milk until tepid and dissolve in the salt and remaining sugar.
- Place the flour in a large bowl. Add the oil, yeast mixture, and milk mixture to the flour.
- Turn the dough out onto a floured surface, and let it rest a minute while you wash out the bowl. Knead the dough eight to ten times. Place the dough back in the bowl, and cover tightly with plastic wrap. Leave the bowl at approximately  for three hours, or until the dough has tripled in size.
-Place the dough on a lightly floured board or countertop, and roll it out into a rectangle.  Fold the dough rectangle in three, like a letter. Wrap the dough in plastic wrap and place on to a cookie sheet to rise for another 1.5 hours, or until it has doubled in size.
-  Using a rolling pin, beat the butter down until it is quite flat. Use a offset spatula to spread the butter until it is smooth and measures 10 x 8. Place the butter in the fridge to chill while the dough is on it’s second rise.
- Roll the dough into a rectangle and place the butter on the top half of the dough rectangle. Fold the bottom third of the dough up and the top third of the dough down. Turn the dough package 90 degrees. Repit it 6 times.
- Cut the square into triangles. Roll the triangle up towards the point, and curve into a crescent shape. Leave the tray of croissants to rise for 3 hour.
- Spread the egg wash across the tops of the croissants. Put the croissants in the oven for 10 to 15 minutes, until the tops are browned nicely.
- Take the croissants out of the oven, and place them on a rack to cool for 10 minutes before serving.
